Palio is the victory banner of the Siena horse race, a purely symbolic object behind which lies a story of intertwined emotions and hatreds spanning centuries. We are storytellers fascinated by the local tales of Tuscany, using local ingredients as a medium. At the dining table, we wander through the hill towns of Tuscany, crossing from ancient Roman Renaissance to the future.
